Lamb Marinated in Citrus, Red Chile, & Thyme
4 tablespoon ancho paste
3 cups OJ
Juice of 3 limes
1 small red onion, chopped
4 cloves of garlic, chopped
2 tablespoons thyme leaves
1 7# boneless leg of lamb, rolled and ties
Salt and pepper
1. Place ingredients in food processor and blend until a paste is formed. Coat lamb and allow to marinate overnight.
2. Remove lamb from marinade and season with salt and pepper. Place lamb on grill until browned.
3. Cook in oven for 30 minutes until medium rare. Internal temperature should be 140 degrees. Serve with Serrano Mint Salsa (recipe below)
Serrano Mint Salsa
1 cup white vinegar
½ cup lime juice
1 15 oz can of chopped tomatoes
3 serrano chiles finely diced
4 cloves garlic, chopped
1 red onion, chopped
4 tablespoons chopped mint leaves
2 teaspoons sugar
1. Combine all ingredients in a bowl and mix well.
